Quinoa Oat Veggie Balls

We cooked earlier some quinoa steaks. In this recipe we did Gold & Green’s pulled oats experiment and added some of their meat substitute in this recipe. The experiment was successful because these balls turned out very delicious.

If you fancy a meaty texture to your food I think you will like this product. For this reason, it has probably become so popular in Finland.

However, the problem with these meat substitutes is that they are heavily processed and makes your food in many cases poorer than self-made and less meaty competitors. However we believe that they will still beat meat ecologically, with better taste and also as a healthyer option for your body.

Quinoa Oat Veggie Balls

2 dl of dry quinoa (400g cooked)
4 small carrots 230g
85g of broccoli (frozen)
200g chickpea flour
6pcs sun-dried tomato slices
1/2 package Gold & Green’s pulled oats (meat substitute)

Spices: curry, pepper Mix (mill), Garlic, Onion, Pepper, Black Salt, grilling spices, cumin, coriander.

Rinse the quinoa and cook for 2 dl. Boiling time varies depending on the desired result. We boiled them around 20 minutes with low heat. But next time we will try shorter time to get more texture from the quinoa.

Rinse the quinoa after boiling and pour into a food processor with carrots and broccoli, as well as with the chickpea flour and sundried tomatoes.

Add meat substitute / pulled oats last and mix it with hands and you will have more texture on to your food.

Roll the balls by hand and fry in coconut oil.

Enjoy for example with rice noodles (Clearspring on the picture), sprouts and hemp pesto.
