Easy, Cheap & Delicious Lentilsoup
Lentil soup has become one of our main dishes lately. Easy, low-cost and protein-rich lentil soup keeps you feeling full for a long time! Lentils have 24g of protein per 100g, which is more than in meat! Even the price is approximately only 2 euros per package (400g), so they are perfect for low-budget diet. If you make a bigger dose at once (according to the recipes amounts below), it will last you for several days. I recommend soaking the lentils, or at least rinse before use, otherwise it may upset your stomach.
Easy, Cheap & Delicious Lentilsoup
4-5 servings
400g red lentils (Organic Urtegram)
2 onions
A couple of cloves of garlic
2 ts salt (Himalayas)
INSTRUCTIONS:
1. (Optional, but a recommended part) Rinse the lentils a few minutes under lukewarm water using a sieve. Move the lenses to the soaking dish and put 4 times the amount of lukewarm water to the dish. Add to the dish teaspoon of salt and a touch of lemon juice. Soak the lentils for 6-8 hours. After soaking, rinse the lentils again for a few minutes with a sieve.
2. Chop the onions into small pieces. Heat the coconut oil in a pan. Add the onion, garlic to the pan and sauté for a few minutes, until the onions are softened. Transfer the onion mixture and lentils to a pot. Then add water, coconut cream, salt and spices. Let the water boil, keep it boiling and cook over medium heat for about 10 minutes, stirring occasionally.
3. Enjoy with a nice warm gluten-free bread.
