Vanilla Ricepudding
Over a year now we have been vegan and for the same period we have been trying detach ourselves from sweets, particularly added sugar. Also additives, colorings and sweeteners are in the list of the dont’s. At the same time we have been experimenting with our own easy recipes with no added sugar, sweeteners and syrups. If you like puddings then you should most definitely add this easy recipe somewhere in your recipe booklet! Flavours what can be achieved easily are example vanilla, chocolate, caramel and many more. There are endless options, only your imagination is the limit!
Vanilla Ricepudding
2 portions
300g Boiled rice porridge (Urtekram)
2 dl Provamel coconut rice milk (Provamel)
1 tbsp coconut cream
6 pcs Dates
2 tsp Vanilla extract (Streenbergs)
1 tsp Vanilla powder
2 tsp of licorice powder
2 tsp lucuma powder
Pinch of Himalayan salt
Put the water and a dab of coconut oil and rice to the pot. Let the porridge simmer for 40-50 minutes. Stir occasionally so that the porridge does not get burned.
Rinse the boiled rice and allow to cool for a moment. Pour the cooked rice and other ingredients in a blender. Use as long as the mixture becomes silky. Put in the fridge for a few hours that the flavors are absorbed and the composition becomes more solid pudding like texture.
